Gourd with shrimp recipe

Gourd is one of the most popular vegetables in Bangladesh. We tend to cook it in different dishes. This dish is made with shrimp and potatoes to give an extra texture to the curry.

Ingredients
  

  • 1 Medium size gourd (small pieces)
  • 250 grams Shrimp (any types)
  • 2 tbsp Avocado oil
  • 2 Potatoes (small pieces)
  • 3 Tomatoes
  • 3 Shallot onions (thinly sliced)
  • salt (as needed)
  • ½ tbsp cumin
  • 1 tbsp Red chilli pepper powder
  • tbsp turmeric powder
  • ½ tbsp Garlic and Ginger Paste (each)
  • 5 Thai Chilli
  • minced cilantro (for garnish)

Instructions
 

  • Cut gourd and potatoes into small pieces and soak into cold water. Then, thinly cut onions and cube tomatoes.
  • On the pan, heat oil in medium temp and then one by one put cumin, onion, and pinch of salt. Let the onion cook until it turns into light golden.
  • When the onion turns light golden, include the spices and stir till it the oil floats on the top.
  • Time to include shrimps. Stir for couple minutes. Add tomatoes and put the lid on to cook for a bit.
  • Once its started spreading a nice aroma, add one by one, gourd and potatoes. After stirring put the lid on and let the gourd release water (add a bit of water after 5 mins).
  • After 7-8 minutes, the curry will give a nice aroma and the gourd and potatoes will be cooked all the way. Lift the lid and add minced cilantro for the flavour, and add few thai chillies before turning off the stove. Serve it with the warm rice or roti.
