Aloo Dum is a classic vegan dish in Bangladesh. It is cooked with baby potatoes (Aloo) and the process is steaming (Dum). The spices adds up an exfoliating flavour inside the potatoes.

What is Aloo Dum?
Aloo stands for potato and Dum means slow-cook. This dish can give a good meaty flavor due to use of various ingredients. The slow-cooking is the major art of this recipe. The potatoes will absorbs the spiciness inside.

How to cook
Step 1: Firstly, boil 10-12 baby potatoes. After that, peeled the boiled potatoes and prepare the ingredients as needed to cook Aloo Dum.

Step 2: Next, heat oil on a medium pan and one-by-one add cumin, onion and a bit of salt to sauté.

Step 3: Once the onion is sautéed, it is time to start adding all the spices and a splash of water to cook the spices for couple minutes. Let it cook until the oil floats on the top.
Step 4: Now, put the tomatoes and cook it in a medium heat with the spices.
Step 5: Once all the spices start to spread aroma, add the boiled potatoes and stir for 2-3 minutes. After mixing with all the spices, pour the water and put the lid to let it cook with the steam.

Step 6: Finally, add the green chilli and chopped cilantro for the additional fragrance and garnish.
Cooking Tips
Coriander powder is not very common thing to find at the store. It is one of the spices most of the Bengali dishes use but without this the food will taste fantastic. So, if you are unable to manage the coriander powder, don’t worry about it.
Serving
Aloo Dum consider as the main course which is the best companion with warm rice or roti. It can be served as main course for lunch or supper.

- 1 Medium Pot
Ingredients
- 10-12 Small Potatoes (according to the recipe but mainly use baby potatoes to cook)
- 2-3 Shallot Onion
- 2 Tomatoes
- 5 Thai Chilli
- 4-5 Cloves, Cardamom
- 2-3 Bay Leaves, Cinnamon
- 1½ tbsp Red Chilli Powder
- ⅓ tbsp Turmeric Powder
- ½ tbsp Cumin Powder
- ½ tbsp Coriander Powder (if you have)
- 1½ tbsp Avocado oil/ Olive oil
- Salt (as needed)
- 1 cup Water (as needed)
- ½ tbsp Cumin
- ½ tbsp Garlic and Ginger Paste
- Cilantro (minced for garnish)
Instructions
- Boil the baby potatoes. Once the potatoes are boiled, peel the skin and keep aside in a bowl.
- Prepare all the ingredients.
- Heat the oil on a medium pan and add cumin, onion and salt one by one, and let it sauté.
- Once the onion is sautéed, add spices accordingly and splash of water and let is cook.
- Add tomatoes once the oil floats on the top.
- After the spices mix well, add the potatoes and stir for couple minutes.
- Now, put water and lid to cook it well.
- Before serve it on the dish, add green chilli and chopped cilantro for additional fragrance and garnish.
